  • Watermelon 200 g
  • Pear tomato 800 g
  • 1 clove of garlic
  • 2 Mint leaves
  • 8 Ice cubes
  • Salt
  • Extra virgin olive oil AOVE

Step by step instructions for watermelon gazpacho recipe

Step 1

To prepare the watermelon gazpacho, choose a good Peris seedless watermelon and pre-cool it in the refrigerator.

Step 2

From one half, we use a ball sack to extract 5 balls per person. Reserve in the refrigerator.

Step 3

Blanch the tomatoes and peel them in cold water.

Step 4

With all the ingredients ready, crush the peeled tomato, the watermelon, 1 clove of garlic without germ, 2 mint leaves and the ice cubes with the blender at maximum speed.

Step 5

Once beaten, lower the speed and add the extra virgin olive oil AOVE. Adjust salt.

Step 6

We choose some nice bowls and place the watermelon balls. Pour the gazpacho on one side without covering the watermelon balls. Garnish with a mint leaf.
