  • Diced piel de sapo melon, 1.5 kg approx.
  • ½ liter of chicken broth
  • 4 strips of Lemon (only the yellow part)
  • Liquid Cream 250 ml
  • 20 melon balls
  • Peppermint Leaves
  • Extra virgin olive oil AOVE

Step by step instructions for cold melon soup recipe with mint essence

Step 1

To prepare the cold Peris toad skin melon soup with mint essence, cut the melon into cubes of approximately 4 cm and reserve in the freezer for at least one hour. It can be left longer even until freezing is reached.

Step 2

Extract 20 melon balls with the ball scoop and set aside.

Step 3

Blend the melon with the lemon strips in a blender, add the chicken broth and the cream. Season with a pinch of salt.

Step 4

Crush the mint leaves with olive oil to extract color and flavor.

Step 5

We serve placing the melon balls, which we almost cover, and we draw with the mint oil a trail of tears.
